The brief was a japanese omakase and by being in Japan a handful of times, FILIPE ALVARO knows that nothing is done lightly in Japan. He came to understand that omakase, traditionally served at a counter, requires a exchange of trust between the chef and his guests once is he who decides what they will eat. Only with these space and trust between both the experience is allowed to happen. This possibility is what Japanese call MA.
